Healthy Snacking For The Holidays: Roasted Almonds

This is an easy snack idea for any holiday party!!
You will find that the almonds taste great with cinnamon only or the added spice of nutmeg and clove. I actually prefer the “spiced version.” Not only do the almonds taste great but, an added benefit is that your home will have the wonderful aroma reminiscent of holidays past!!
Cinnamon-Roasted Almonds
Ingredients
1 egg white1 teaspoon cold filtered water
4 cups whole natural almonds
1/2 cup white sugar-I used the raw organic sugar from Trader Joe’s.
1/4 teaspoon salt
1 teaspoon ground cinnamon
- *For a great variation add up to one teaspoon of each cloves and nutmeg to taste in addition to the cinnamon for a more spiced version.
Directions
- Preheat oven to 250 degrees F (120 degrees C). Lightly grease a 10x15 inch jellyroll pan. (I used coconut oil and a cookie sheet)
- Lightly beat the egg white; add water, and beat until frothy but not stiff. Add the nuts, and stir until well coated. Mix the sugar, salt, and cinnamon, and sprinkle over the nuts. Toss to coat, and spread evenly on the prepared pan.
- Bake for 1 hour in the preheated oven, stirring occasionally, until golden. Be careful not to burn the almonds. Low and slow is the way to go. After an hour in the oven they won’t seem quite done. Let them cool right on the sheet…they’ll start to make a crackling noise and magically become crunchy. Allow to cool, and then store the nuts in airtight containers.
